I am firmly in the camp of not spreading Deeds around. It's not that other Classes and NPCs can't attempt to trip opponents, disarm opponents, etc. -- it's that they can't do it along with damage. I think your blend sounds awesome and your players should have a fun time.
I also think both modules are strong as written and playing them in succession is also a fun option.
Whichever approach you take, as long as you lean into the system and embrace it, you should all have a great time.

Lankhmar does not use zero level characters or the Funnel. You could introduce them via the Lankhmar Box Set and go from there.
